Oh, My WORD, Friends!!!!! I cannot even express how insanely decadent and delicious this chia pudding recipe is. Imagine banana cream pie or your favourite banana pudding; only it's now okay to eat for breakfast and is actually packed full of nutrients that will fuel your body.
Chia seeds are packed with Fiber, protein, omega-3's, Calcium and the list go on. Chia seeds have a very neutral flavour and the ability to absorb liquid, so they are ideal for adding to smoothies, cereals and baking. They also have this amazing ability to gel as they absorb liquid to make a fantastic pudding-like texture. And that's just what the plan for this recipe is. We are going to turn some very ripe bananas and chia seeds into a fantastic nutrient-dense pudding. Nutritious enough to be served for breakfast but delicious enough for dessert.
Did I mention it's also Whole 30, Paleo, Vegan, dairy-free, gluten-free and Vegetarian? Literally, everyone can enjoy this pudding. I like to serve mine up in mini mason jars, not only for convenient storage but also they look so dang cute. Give this pudding a try; your family will be eternally grateful!
3 very ripe bananas
1/2 cup chia seeds
1/2 can full-fat coconut milk
1/2 cup cold water
This recipe makes six individual portions.
In a small mixing bowl, mash the bananas well, then add the vanilla, coconut milk and cold water. Combine well.
Add the chia seeds to the mixture and stir gently for three to five minutes. The chia seeds will start to absorb the liquid, and the mixture will thicken into the pudding.
Divide the pudding into portions or cover the bowl and tuck in the fridge until your ready to serve. When you are ready to serve, top with extra banana slices and ground cinnamon if you would like.
